The story of a family legacy

A legacy served at the table

Carnes & Olivas opened in September 2007, founded by Yolanda Casallas, who set out to share traditional dishes and big flavours with locals and visitors to Villa de Leyva alike.

She made her name through her love of the community and of Boyacá cooking, giving a taste of Colombia to everyone she met along the way.

Today the restaurant is run by two of her nephews, who carry on serving the best of those memories and flavours.

We are at Carrera 10 # 11-55, in the historic centre of Villa de Leyva, a few steps from the Plaza Mayor. You can also find us at Los Portales, our other address under the arches on the main square. Get directions.
How do I book a table?

What are your opening hours?
We are open every day from 10:00 a.m. to 11:00 p.m. Hours can change in high season and on long weekends, so if you are coming close to closing time it is safest to check on WhatsApp.
Do you have wood-fired pizza?
Yes. We make 16 hand-made wood-fired pizzas, small with 4 slices and medium with 6. Bear in mind that pizza is not fast food: it takes 25 to 45 minutes. See the pizzas.
Which traditional Boyacá dishes can I order?
We have cuchuco con espinazo, ajiaco and mazamorra, as well as sobrebarriga in criolla sauce, lengua al vino, envuelto with longaniza, and trout from the region. See the Boyacá classics.
Are there vegetarian options?
Yes. Among the pizzas there are the Pomodoro, la Fresca y Dulce y la Cuatro Quesos, all meat-free. Mention it to your waiter when you order and we'll guide you through the rest of the menu.
